Drinking together, Raph will show you his garden and most of the vegetables he grows himself for you, while listening to music and conversing about his home restaurant project: a new intimate but casual venue to show his cuisine based on sustainable- local - ingredients, self-made produces and worldwide flavours contamination. A set menu of numerous courses will be served pronto; and Raph – also an accomplished music composer – will show and serve every dish right in front of you, explaining the story behind every edible symphony, guiding you through the different stages of the creative process and its interaction with music. Raph's idiosyncratic cooking - New Neapolitan style - will take your tongue and palate on a trip around the world, making you smell the sea of Naples as you’re eating ramen, or by making you feel like being in Mexico as you hold a scrumptious taco in one hand and a glass of delicious natural wine in the other. Chef and former owner and manager at different restaurants between Norway's capital, Oslo and his native city of Naples, where he moved back in 2015 to start several projects in the city’s thriving food business. Soon he got fed up by the constraints of the restaurant circuit and decided to throw all limitations and routines out of the window. His goal: to achieve total freedom away from the boundaries of standardized dining experiences. He developed his idea of cooking, focusing on vegetables by drawing on his experience in a biodynamic farm in Oslo, “neglected” fish – which on the contrary is highly flavorsome and rich in taste and tradition – and sustainable ingredients farmed naturally or in the wild. He is also very keen on food fermentation processes and is continuously experimenting with preservation techniques.
