The tasting consists of the 5 most eminent pre-Hispanic drinks. We begin the tasting with Pinole (an energy drink), continuing onto Pozol (a virility drink), Tascalate (a drink of love), Tejate (a drink of the gods) and then finally finish the tasting with Pox (a drink with medicinal qualities). All of these drinks are formed of ingredients which characterise Mexican culture, such as corn, cocoa and many more. You will know their extensive history of use and origin.
Cooperativa Chiapaneca is a project that my sister, Karla and I, Raquel, started together. It is dedicated to promoting the wide variety of gastronomic products from Chiapas - a state in southern Mexico. Why Chiapas? Because, it represents our families roots and we wish to celebrate and share its natural, cultural and gastronomic wealth. We work with small scale producers indigenous to the region, who have shared their vast knowledge with us. They have taught us about the origins of our ancestral drinks from the pre-Hispanic cultures - such as Mayas Lacandones, Zoques, Tzotziles and Tzeltales. And now we want to share this knowledge with you.
