It will be a lunch based on wild herbs collected by me in Abruzzo and in the green areas surrounding Bra. Students from Unisg will help me to cook and serve lunch. Dishes will serve to exalt the deep taste that what is spontaneous can give mixing wild product, cheeses and raw materials chosen in the stands of the fair “Cheese 2019” as well as fresh vegetable from Bra farmer’s market. Meat will be present but also alternatives for vegetarians. Details on menu will be published shortly
I'm a Gastronomist from Abruzzo graduated at the University of Gastronomic Sciences of Pollenzo, Bra in Piedmont region, Italy. I took the degree in 2010 with a research thesis in Ethnobotany. In the next years i participated in field research in Italy, Albania, Macedonia, Haiti and Dominican Republic. In 2014 I attended the Niko Romito Academy (3 michelin stars) in Castel di Sangro, Abruzzo region. Now i work as forager (collector and consultant) between Abruzzo and Marche. I collaborate with cooks and farmers to defend the enormous cultural / identity heritage that lies behind collection of spontaneous plants and cultivation of ancient varieties
