Oriundo, which means it originates and is native from a specified place and area which, in our case, all products have originated and are selected from Puerto Rico. But it's not just from farm to table, its more than that; this experience immerses you into the great biodiversity our island has to offer. The main purpose of Oriundo is to introduce every product the island has provided for centuries into different unique dishes from recipes recollected throughout the years from different cultures by our chef Martin. Our unique tasting menu is made out of native and naturalized ingredients that are part of Puerto Rico’s archipelago biodiversity. Products that are not only found in the island but also in most parts of the equatorial strip. It proposes to create a dynamic interface in which diverse and unique actors converge with multiple wisdoms to add value to what we used to eat, to what we currently eat, and everything edible that can occur in our natural environment, in a sustainable and responsible way. We also tend to promote echo sustainability through the full use of these eatables, like straws out of papaya stems, and including not just the fruit but also the leaves of chayote squash in a salad. This experience will always be unique and we promise to awaken all your senses. Join us and learn everything there is to know about Puerto Rico’s culinary world guided by us.
Oriundo, the culinary journey of experiencing the vibrant biodiversity Puerto Rico has to offer. Through this experience our team at Cocina Abierta will guide you into the different aspects of our unique tasting menu, which involve exclusive and limited ingredients, immersing your every sense into each dish. Through Oriundo, we want to rediscover the vast history of Puerto Rico's flora and fauna, artisanal fishing and hand picked products, some of which aren’t commonly found at farmers markets or fish markets. We create a complex and unique tasting menu, and present it to our guests, providing a different experience through which everyone can learn and appreciate one of a kind dishes. Our restaurant's bar also uses local recollected fruits and herbs, mostly a Rum Bar, with unique cocktails, and house made beer by our Master Brewer.
