If you love Japanese cuisine, you have tasted Miso and you may be liked it. However, it's not clear what Miso is and how it's made, isn't it? So, let me show you all the technic of homemade Miso with some information to help you understand it deeper.

Firstly I will explain to you about the process and the ingredients and then you will mix all the ingredients to take the Miso back home. You would need 3-12 months to ferment it.

The process takes a while but this experience will be a unique souvenir in the end. The handbook I made and after support by e-mail will guide you through the fermentation process so that you won't suffer after the workshop.


The level of the workshop is from beginners to experts. Please feel free to ask me any questions about Miso.

Hi :) I call myself Travelling Fermenter, who have now been travelling and teaching about homemade Miso for the last several years.

The 1st time I ever made homemade Miso was in 2011. I didn’t expect the homemade Miso to taste so good. The taste was not only salty but a bit sweet and full of Umami. I was really thrilled because it had a richer taste than the miso you can buy on the market. This firs​t experience encouraged me to organize Miso workshops from Norway to NewZealand.

Offering Miso workshop is the most favorite thing. I'm sure that my workshop is a very unique and unforgettable experience and the Miso you make will be a special souvenir to bring back home with you.

If you're interested in food and you like miso, you should absolutely go to this workshop. Akane is very knowledgeable, you will make your own miso and she will answer all your questions. And her little "fermentation show" at the end of the workshop was great fun! Thank you, Akane!

I can say I was truly delighted of being introduced at this fantastic miso fermentation universe by Akane ,so you can notice by first hand that she is a person who really loves her job and without a doubt she knows how to handle a class !! in fact ,I haven’t know that much about this subject,so she made all easier for me in order to get closer and feel selfconfident working with miso for my very first time ! I absolutely recommend this class for anyone who’ll get the chance to pass by for Yokohama and feels somehow interest for Japanese fermentation culture !! Thanks Akane !

Everyone, take this class. IT'S AWESOME!! In this day and age of plastic and instant food, it may seem inconvenient to make your own anything. But Akane-san guides you through with detailed step-by-step instruction with photos as well as easy-to-understand explanations. She explains how and why miso is prepared the way it is. You'll learn to appreciate miso and fermented slow food. You get to take a break from instand-everything busy life and get a taste of the old-time zen foodmaking and its stories. This class and Akane-san are true sources of inspiration. I recommend this class to everyone. Seriously take this class! Please!!

Unique opportunity to learn a skill that most locals don’t even know about! Akane’s presentation included the background and process for preparing miso. We talked about each ingredient individually and really got an understanding of the role it plays. She provided clear written instructions so we could prepare again on our own at home. とても為になるレッスンでした。先生の味噌愛がよく感じられます。台湾出身の私の希望通り、大豆、麹の種類、気候がどう影響するかについて丁寧に紹介していただき、味噌作りのプロセスも実際に体験させていただきました。さらに奥の深い発酵の原理を人形劇で分かりやすく説明していただきました。近い将来、先生を呼んで台湾で味噌を広めていただきたいと思います。味噌に興味をお持ちの海外の方にオススメです!!!
