In a uncontaminated and peaceful context in my country house, I will lead you to the wonderful world of "Scaccia", our typical street and holiday food. Scacce are a kind of focaccia (a sort of bread filled with vegetables and cheese).
First of all we will make the dough for scacce using durum wheat flour from an ancient stone mill that grinds only grains from sicilian heirloom seeds like Russello and Timilia. We will add "criscente" (homemade sourdough starter that I inherited from my grandma) and our extravirgin olive oil. I will teach you the tricks for a well-balanced "sfoglia" (the thin layer of bread), tasty and crisp.
While the dough grow, we will cook the vegetables for the stuffing: eggplants, onions, spinach, potatoes, broccoli (depends on the season). All vegetables will be organic from our garden or organic market.
Then we will make two different kind of sfoglia, one very thin for tomato scaccia and another thicker for other scacce. At this point we can fill and bake scacce.
At the end we will have lunch with our handmade scacce, drinking delicious organic Nero d'Avola wine. If the weather allows, we will have lunch outside, in the garden, under our big olive tree! I declare that this activity meets the guidelines for food handling based on the Five Key Points for Safer Food Program of the Pan American Healt Organization.
Other things to note
If you don't have a car, you can take a bus from Ragusa (or from Catania) to COFFA, provided by Interbus Etna Trasporti (check their website for schedule). There we will pick you by car for free.

We'll teach our class in the kitchen of "Casa Filosofica", our home and cultural association that connects nature, culture and good food. It's an old stone country house in a sunny untouched place surrounded by olive trees, old oaks, pines, cypresses, indian figs, many fruit trees and an organic vegetable garden. If the weather allows, we will have lunch outside, in the garden, under our big olive tree!
A great experience all round. We took our two children (3 years and 8 months) and they were made to feel very welcome. Our 3 year old had a great time picking vegetables and herbs from the garden, eating fresh pomegranate from the tree and tasting the food. We learnt many new cooking techniques and enjoyed a feast and a chat at the end. The location is idyllic!

This was truly a great experience. Simona was very kind and sincerely interested in me learning the technique of Scacce. It was great getting to know you and your sweet family. The food was fantastic and plenty, so my kids husband and kids could join us for lunch.
