Our family holds a strong tradition of Cannoli-making, since my mum, Dina, has inherited an original recipe from 3 generations, and she has been making cannoli for 30 years. Texture, frying, proportions: there is a lot that can go wrong. But cannoli have no secrets for her! She has transmitted all her knowledge to me, and we love to create authentic magics of taste, keeping our traditions alive. Through this experience, we try to overwhelm our guests with little pieces of our history at each bite! We will create perfect Cannoli, one of the most delicious and replicated Sicilian dishes. You will learn the original steps to make cannoli from scratch directly from a Sicilian mum: nothing like the industrial ones! A fragrant exterior, a satisfying Sicilian ricotta cheese filling! We will prepare the traditional dough; then, you will learn how to deep-fry them in circular shape, the way our ancestors used to, and you will refine a locally made ricotta with our ancient wooden tools, a precious heritage of our family. In the end, we will fill cannoli just before tasting, ‘’espresso’’, as true Sicilians do. Realizing cannoli won't be only a meal prep, but a moment of cultural exchange.
