We will learn how to prepare a delicious meal using fermented ingredients—a traditional part of Japan cuisine and a natural means of salvaging food. We'll gather in a cozy home and discuss the ways in which fermented food can be used to make tasty, nutritious dishes. We will learn creative recipes with the ingredients on hand and prepare a delicious, socially responsible meal to enjoy together. You will leave with a wealth of knowledge on fermented foods and food salvage tips to put into practice at home.

I’m a founder of No Waste Yes Party Melbourne, a non-profit dedicated to reducing food waste. I work for Food Salvage to help raise awareness and participation in the salvage lifestyle. I co-host this experience with Megumi, a certified fermentation master and Japanese food culture expert. She will share how to incorporate Japanese fermented food—and its many health benefits—into home cooking.

It was a great experience for me to join this "Salvage Party". Before joining this event,I had no idea about "food salvage". I always go to the supermarket after deciding the menu. But this event wasn't what I expected. We brought leftovers or ingredients that we didn't know how to use from our home and put everything on the table and shared our ideas what we cook with these ingredients. This event made me motivated to cook for myself. It gave me an opportunity to put my new ideas on my food life. I would like to say thank you to the hosts, Risa and Megu and also highly recommend you to join this event next time.

It was much more fun than I had expected. Although I was about to throw away the olives which I mistakenly bought, it was turned into tasty marinated salad mixed with ripe persimmons, which another participant brought from their home. Ingredients which have closer expiry dates were also cooked in novel ways with creative ideas of our master fermentator. In addition, thanks to the host Risa and Megumi, we were communicating with each other in English, so as Japanese, I could feel international. Things like cooking and having meal together sounds so simple. But I feel such simple thing is the value of communication, you can experience the value here!.
