In my cookery classes I combine know-how with food chat and we'll produce some fine food in the process. There's a selection of classes that cover Catalan, Spanish and wider Med cooking. There´s something for everyone - whatever your culinary talents. In our 4-hour morning classes, firstly a freshly squeezed juice and tortilla as we say hello to each other and you get over the shock of my tattoos! Being based in Sitges' perfect- sized indoor market, we'll step out and take a special tour for 30 minutes. I buy almost all my produce here and I've known many of the traders for years. Then down to work... when we´ll knock out some amazing dishes. Not the sort of class where we all have a chopping board, a knife and an onion. That really isn't my style. Sure, everyone can help and we'll move at a pace to suit you. Most of all I want to inspire you. We'll have some fun and, of course, some fab food in the process. Paella. We'll cook a version of Spain's best known dish that's popular in these parts... from the land, with rabbit, chicken & pork. We'll get to grips with what makes this such a fabulous dish. Every Paella is individual and ours will be no exception. Before we cook Paella we'll roll out a selection of 5 hot and cold tapas dishes….from the sea. Typically: Boquerones, Salt Cod fritters, Ensaladilla de Marisco, Calamares a la Romana, Tuna Empanadilla.
Everything is provided to assist in the production of the meals. You will be welcome to eat everything we produce!
The former marketing guy immersed in London dining (on expenses). So in love with cooking and food, I later trained for 2 years to become a chef. Then came the private dining restaurant and a specialist restaurant marketing consultancy. For the last 25 years I've worked in small and large kitchens, maybe setting up a new menu or concept; sometimes running the operation. Brought up in the Med, I later knew that simply travelling around its shores wouldn't be enough to satisfy my love for its lifestyle and especially its food. So in 2002 I moved to Sitges. Sometimes I can be found working in London, but my home and heart is here cooking by the Med. For as long as I can remember I've been asked for my recipes and ideas, engaging in food chat. I could not ask for more than my cookery school to be in the town´s central market. Ricky M
Most of my classes are based in Sitges' air conditioned indoor market. That's where our purpose built demo kitchen is. If we run out of something...no problem. This is true market cooking. We´ll do a market tour before we start cooking plus a chance to take a 15 minute break and walk around the market again, maybe take a coffee.
