We invite you to a journey of Mexican biodiversity through the work of bees and their honeys.
Native or Meliferas, the bees look for the nectars in the flowers and transform them, as if by magic, into an increasingly special honey.
From arid areas to the mountains, from the tropics to the Yucatan Peninsula, bees offer us ancient elixirs.
Mesquite, Aceitilla, orange blossom, tamarind, huano, tajonal or dzidzilche are plants, shrubs or trees that produce a unique and very Mexican honey.
We will start the tour talking about the process from the flower to the honey in the comfort of the meliponario (house of the bees) under the ceiba (the Mayan sacred tree) in a magnificent tropical garden.
We will open hives of native stingless bees (they do not sting) and we will see their organization and specificities.
We will talk about the importance of native bees for the Mayans of yesterday and today.
We will end up tasting all the honeys we have, more than a dozen, each one with its respective flavor, color and texture.
With bread, water, cheeses and fruits we will enjoy this tasting experience.
